1500 g finished miso, ca. 1200 ml. Weighted with bagged salt (ca. 700 g)

Ingredients

  • 345g short grain rice koji (light rice koji spores)

  • 800g cooked soy beans

  • 182g water

  • 172g salt (13% of above)
